Za'atar Oregano
(Origanum syriacum) Za'atar is the wild oregano of the Levant, used in the eponymous seasoning mix of the same name (with sumac, thyme, ground, sesame, salt etc). A wild plant often growing in rocky, hilly soils from Egypt to Jordan, it is central to the cuisine and culture of the area. The flavor is a warming and pungent melange of oregano, marjoram, and thyme notes. An evergreen, tender perennial, it prefers well-draining soil and doesn't love wet feet combined with freezing temps. In very cold, wet areas, it can easily be grown as an annual. We find it to be fast-growing and a wonderful addition to our kitchen herb garden, used to season flatbreads and vegetables, and crushed in olive oil, it makes a lovely dip for bread.
